Dazzling Blueberry Muffins | Recipes
- 1 1/2 cups flour
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup canola oil
- 1 egg
- 1/2 cup milk
- 1 1/2 teaspoons vanilla extract
- 1 package of fresh blueberries
Preheat the stove to 400°. I used a standard 12 muffin pan but there are other size muffin tins you can use just depends on your immediate need that will determine which pan you will use. I lined them with muffin cups and then started to prepare the muffin batter.
First we will mix together all our dry ingredients. Put your flour, baking powder, salt and sugar in a large bowl.
Now for your wet ingredients. In a small bowl preferably a 2 cup measuring cup put your canola oil, egg, milk and vanilla extract and whisk together. You will then pour this mixture into your dry ingredients and mix it together but don't over mix it. Get your fresh blueberries and begin to slowly fold them into the batter until they are all mixed in.
Start to fill your muffin cups up but don't over fill them. Place in the oven for 20 minutes. Take out after 20 minutes and let cool for about 5-10 minutes and eat with a nice glass of milk.
